Seven Ways To Eat
Your Kolbász.

First things first: this is a fresh, raw sausage. Cook it through, then it's your kitchen — here's how we like it.

Cook it through — every time Bring the thickest link to an internal 74°C / 165°F. A thermometer takes out all the guesswork. Keep it cold until you cook it — thaw in the fridge, and let low-and-steady heat beat blackened-and-raw.

The Seven

Pan, fire, oven, and beyond.

01
The Pan

Cast iron, classic.

Medium heat, a splash of oil or a little water in the pan. Turn every couple of minutes for 12–15 min until browned all over and 74°C inside. Lid on for the last few if it's browning too fast.

02
The BBQ

Grill, low and even.

Medium, indirect heat. Grill 12–16 min, turning often, off the fiercest flames so the casing doesn't split before the centre's done. Finish over direct heat for the char.

03
The Oven

Roast, hands-off.

200°C / 400°F. Roast on a tray 20–25 min, flipping halfway. Throw sliced peppers and onions around them and dinner cooks itself.

04
The Smoker

Low, slow, worth it.

110°C / 225°F for 1.5–2 hrs with a fruit wood until 74°C inside. The paprika and smoke were made for each other — patience pays.

05
With Eggs

Breakfast, sorted.

Slice into coins, crisp them in the pan, then pour beaten eggs over the top and scramble soft. Paprika-orange eggs on buttered toast — the best reason to get up.

06
The Burger

Casing off, patty on.

Slit the casing, squeeze the meat out, and press into a patty. Sear hard for a crust, then load a bun with mustard and pickled onion. A kolbász burger — you're welcome.

07
The Balls

Roll them, sauce them.

Casing off, roll into meatballs, brown all over, then simmer in a paprika-tomato sauce. Serve over nokedli, rice, or a pile of buttered noodles.
